Fusel Oil

Fusel oil is a volatile, oily mixture of mainly iso-amyl alcohol, an active amyl alcohol, produced by the yeast as by-product during our fermentation process. The fusel oil is removed during the distillation process and finds its main applications in the flavour and perfumery industries.
